Giovanni's Italian Restaurant Wastewater Collection System

Dear Mr. Holden:
On April 20th, 2023, Division of Water Resources staff Ron Boone conducted a routine
compliance inspection at Giovanni's Italian Restaurant Wastewater Collection System.
Meredith McDowel, restaurant manager, was present during the inspection. A review of
records and the collection system was completed. This review reflected non-compliance
with the applicable regulations.
The following violations were noted:
1. There is no system map.
2. There is no operations and maintenance plan.
3. The pump station is only inspected as needed but must be inspected daily in accordance
with applicable regulations.
4. None of the required documentation was available.
Other observations:
1. There are no high priority lines or right-of-ways in the system.
2. The grease trap is pumped a minimum of every 90 days, or as needed. Kitchen staff
produce a minimum of grease and try not to allow much grease enter kitchen drains.
3. Overflows must be reported to the Winston-Salem Regional Office at 336.776.9800
within 24 hours.
You are reminded that failure to comply with NC regulation 15A NCAC 02T .0400-0405 is a
violation of NC General Statute 143-215.1, which is enforceable with a civil penalty of not
more than twenty-five thousand dollars ($25,000) pursuant to 143-215.6A.

Inspection Summary:
Ron Boone, of the NC Division of Water Resources (DWR), Winston-Salem Regional Office (WSRO), conducted a
compliance evaluation inspection of Giovanni's Italian Restaurant's wastewater collection system on April 20th, 2023.
Meredith McDowell, restaurant manager, was present for the inspection. The Giovanni's Italian Restaurant's wastewater
collection system is deemed permitted. Findings of the inspection are summarized below:
OBSERVATIONS:
(1) There is no system map.
(2) There is no operation and maintenance plan.
(3) The pump station is equipped with audible/visual alarms only and therefore must be checked every day. Currently, it is
being inspected as required.
(4) There are no high -priority sewers in the system.
(5) There are no right-of-ways in the system.
(6) Overflows must be reported to the Winston-Salem Regional Office at 336.776.9800 within 24 hours.
(7) The restaurant does have a grease trap, which is pumped every 90 days or as required.
(8) Required documentation was not presented.
Please be aware that failure to fully comply with applicable regulations violates North Carolina General Statute (NCGS)
143-215.1 and NCGS 143-215.6A allows a civil penalty of not more than twenty-five thousand dollars ($25,000) against any
person who violates 143-215.1.
