Weaver, Jr. NPDES Unit Subject: NPDES Permit NCO036919 / OLd Beaufort Elementary School WWTP Operation of catering business This memorandum is in response to your fax requesting the Division's authorization to operate a catering business in the subject facility. The Division does not object to your proposal. Based on your description of the activities to be conducted, the existing wastewater treatment system should be of adequate design to handle the wastewater your operation will generate. Be aware that the subject facility discharges to a "zero -flow" stream, a waterbody that has no naturally occurring flow during dry weather conditions. Potential impacts to water quality are much greater in such streams, and impacts at the point of discharge may persist downstream as a result. The Division strongly recommends that all such discharges be connected to regional collection & treatment systems. You are strongly advised to minimize any discharge of grease into the wastewater system. Collect grease from cooking equipment prior to washing and dispose of it separately. Excessive grease could limit the system's treatment efficiency, or cause a system failure. Incomplete treatment or failure of the treatment system would cause harm to the receiving stream as well as make the Town of Pantego liable for civil enforcement action. Weaver, Jr. NPDES Unit: We are Mark and Anna Keyzer, owners of a small catering business that is planning to lease the kitchen in the former Beaufort County Elementary school cafeteria. We need a permitted kitchen in which to work out of in the Beaufort County area. We, as a family, have marry jobs besides the catering. Mark farms, tends hogs, and owns a meat route that covers Beaufort and Hyde County. I, Anna Keyzer, teach full time at Terra Ceia Christian School. The catering business is operated usually on the weekends. It will never be a full time 24/7 restaurant, cafeteria, or catering business. Our water usage in the past establishment that we had was never more that 5000 gallons of water per month. Most of our menu is cooked on site. The kitchen's main use will be preparation for a simple menu. We will not be washing dishes that are served to the public. We ale open to the idea of establishing hook up to the county sewer system in the future. Number of engagements per week: 1 to 3 Menu: grilled steak and pork loin on site with baked potato, salad, dessert pig picking on site, with slaw, stewed potatoes, beans, corn bread Utensils: single service Building Use: mostly prep, minimum washing Water Usage: less than .5000 gallons per month The Beaufort County Health Department has inspected the kitchen and feels that it will adequately fill our needs. The kitchen has .met all their qualifications, but the health department needs a letter from you stating that the current sewer system can handle our limited amount of water usage.
